1 pound ground chicken
1/2 cup shredded white cheddar cheese
1 cup fresh spinach, finely chopped
2 cloves garlic, minced
1/4 cup breadcrumbs (or almond flour for low-carb)
1 egg, lightly beaten
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for cooking)
**Optional toppings:**
Lettuce or burger buns
Tomato slices
Avocado
Chipotle mayo or mustard
Instructions
1. In a large bowl, combine ground chicken, cheddar, spinach, garlic, breadcrumbs, egg, onion powder, paprika, salt, and pepper. Mix just until combined — do not overmix.
2. Form into 4 even patties.
3. Heat olive oil in a skillet or grill pan over medium heat.
4. Cook patties for 5–6 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
5. Rest for 2 minutes before serving.
6. Serve on buns or lettuce wraps with your favorite toppings and sauces.
Notes
Make it spicy: Add 1 tablespoon of hot sauce or diced jalapeños.
For a smoky flavor, grill instead of pan-frying.
These freeze beautifully — form patties, freeze raw, and cook from frozen for 15–18 minutes.
Pair with sweet potato fries or a light salad for a balanced meal.
