Description

These classic vanilla French beignets are soft, airy, and finished with a generous dusting of powdered sugar. A café-style treat that’s easy to make at home and totally irresistible.


Ingredients

2 1/4 tsp active dry yeast (1 packet)

3/4 cup warm milk (110°F)

1/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

3 tbsp unsalted butter, melted

2 3/4 cups all-purpose flour

1/2 tsp salt

Vegetable oil (for frying)

Powdered sugar, for dusting


Instructions

1. In a small bowl, dissolve yeast in warm milk with a pinch of sugar. Let sit until frothy (5–10 minutes).

2. In a large bowl, beat eggs, sugar, vanilla, and melted butter. Add yeast mixture and mix well.

3. Stir in flour and salt gradually until a soft dough forms.

4. Knead by hand or mixer for 5–7 minutes until smooth and elastic.

5. Cover and let dough rise in a warm place for 1–2 hours, until doubled in size.

6. Punch down dough, roll out to 1/4-inch thickness, and cut into 2–3 inch squares.

7. Heat oil to 350°F in a deep pot. Fry beignets in batches until golden on both sides (about 1 minute per side).

8. Drain on paper towels. Dust heavily with powdered sugar. Serve warm.


Notes

Don’t overcrowd the fryer—beignets puff best with space.

These are best enjoyed fresh, but you can reheat briefly in the oven.

Add a pinch of cinnamon to the sugar for a warm spice twist.
