Description

Ingredients

For the Crust:

1 cup graham cracker crumbs

3 tablespoons melted butter

12 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1/2 cup heavy cream

1 teaspoon vanilla bean paste (or vanilla extract)

For the Brûlée Topping:

1/4 cup granulated sugar


Instructions

1. Preheat oven to 325°F (165°C) and line a muffin tin with cupcake liners.

2. In a bowl, mix graham cracker crumbs with melted butter.

3. Press a small amount into each liner to form the crust.

4. In another bowl, beat cream cheese until smooth.

5. Add sugar and mix until creamy.

6. Add eggs one at a time, mixing well after each addition.

7. Stir in heavy cream and vanilla bean paste.

8. Divide the batter evenly among the cupcake liners.

9. Bake for 18–22 minutes until set but slightly jiggly in the center.

10. Let cool completely, then refrigerate for at least 2 hours.

11. Before serving, sprinkle a thin layer of sugar on top of each cupcake.

12. Use a kitchen torch to caramelize the sugar until golden and crisp.

13. Allow topping to harden, then serve.
