Ingredients
1 (4–6 lb) prime rib roast (bone-in or boneless)
2 tbsp olive oil or softened butter
4 cloves garlic, minced
1 tbsp kosher salt
1 tbsp freshly ground black pepper
1 tbsp chopped fresh rosemary (or 1 tsp dried)
1 tbsp chopped fresh thyme (or 1 tsp dried)
Optional: 1 tsp Dijon mustard
Instructions
1. Remove the roast from the fridge 1–2 hours before cooking to bring to room temperature. Preheat oven to 500°F (260°C).
2. Pat the roast dry with paper towels. In a small bowl, mix olive oil (or butter), garlic, salt, pepper, rosemary, thyme, and optional Dijon.
3. Rub mixture all over the roast, including sides and bottom.
4. Place roast bone-side down or fat-side up on a rack in a roasting pan.
5. Roast at 500°F for 20 minutes to form a crust, then turn oven OFF (do not open the door) and let roast continue to cook for 2 hours. Do not open the oven.
6. After 2 hours, check internal temperature: 125°F for rare, 135°F for medium rare. If undercooked, turn oven to 375°F and roast until desired doneness.
7. Remove roast and tent with foil. Let rest 15–20 minutes before slicing.
8. Slice and serve with au jus or creamy horseradish sauce.
