Ingredients
1 lb ground turkey
1 small onion, diced
2 cloves garlic, minced
2 cups peeled sweet potatoes, cubed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (28 oz) diced tomatoes
2 cups chicken broth
1 tbsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt and pepper, to taste
1 tbsp olive oil
Optional toppings: shredded cheese, avocado, sour cream, cilantro, lime
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it apart as it cooks.
2. Add diced onion and garlic; sauté 2–3 minutes until softened.
3. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
4. Add sweet potatoes, black beans, kidney beans, diced tomatoes, and chicken broth. Stir well.
5. Bring chili to a low simmer, cover, and cook 25–35 minutes until sweet potatoes are tender and flavors deepen.
6. If desired, simmer uncovered a few more minutes to thicken.
7. Taste and adjust seasoning before serving.
8. Serve hot with optional toppings like shredded cheese, avocado, sour cream, cilantro, or lime.
Notes
Make it spicier with jalapeños or cayenne.
Use butternut squash in place of sweet potatoes if preferred.
Chili tastes even better the next day and freezes beautifully.
For a thicker consistency, mash some sweet potatoes or beans near the end of cooking.
