Ingredients
12 wontons (store-bought or homemade)
1 tablespoon red curry paste
1 tablespoon vegetable oil
3 cups chicken broth
1 cup coconut milk
1 teaspoon fish sauce
1 teaspoon brown sugar
1/2 cup mushrooms, sliced
1/2 cup baby spinach
1 teaspoon grated ginger
2 cloves garlic, minced
1 tablespoon lime juice
2 tablespoons chopped cilantro
1 green onion, sliced
Instructions
1. Heat vegetable oil in a pot over medium heat.
2. Add red curry paste and cook for about 1 minute until fragrant.
3. Add minced garlic and grated ginger and stir well.
4. Pour in chicken broth and bring to a gentle simmer.
5. Stir in coconut milk, fish sauce and brown sugar.
6. Add sliced mushrooms and cook for about 3–4 minutes.
7. Add wontons to the soup and cook according to package instructions until tender.
8. Stir in baby spinach and cook for about 1 minute until wilted.
9. Add lime juice and mix well.
10. Garnish with chopped cilantro and green onions.
11. Serve hot and enjoy.
Notes
Use shrimp or chicken wontons for extra flavor.
Adjust curry paste depending on your spice level.
Add noodles for a heartier soup.
