Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 cups pineapple chunks

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon sriracha

1/2 teaspoon salt

1/4 teaspoon black pepper

2 green onions, sliced

1 tablespoon sesame seeds

Cooked rice for serving


Instructions

1. Pat the shrimp dry with paper towels and season with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add shrimp and cook for 2 to 3 minutes per side until pink and fully cooked.

4. Transfer the shrimp to a plate.

5. Add pineapple chunks and sliced bell peppers to the skillet.

6. Cook for 4 to 5 minutes until slightly caramelized and tender.

7. Stir in minced garlic and cook for 30 seconds until fragrant.

8. Whisk sweet chili sauce, soy sauce, lime juice, and sriracha in a small bowl.

9. Pour the sauce into the skillet and stir well.

10. Return the cooked shrimp to the skillet and toss until evenly coated in the sauce.

11. Cook for 1 to 2 more minutes until heated through.

12. Garnish with green onions and sesame seeds.

13. Serve warm over cooked rice.


Notes

Fresh pineapple creates the best sweet and tangy flavor.

Do not overcook the shrimp because they cook very quickly.

Add broccoli or snap peas for extra vegetables.

Adjust the sriracha for more or less spice.
