Description

Stuffed Pepper Casserole has all the cozy, comforting flavors of classic stuffed peppers — without the fuss! It’s hearty, cheesy, and perfect for family dinners.


Ingredients

1 lb ground beef (or ground turkey)

1 tbsp olive oil

1 onion, diced

3 bell peppers (red, yellow, green), chopped

3 garlic cloves, minced

1 can (15 oz) diced tomatoes

1 can (8 oz) tomato sauce

2 tbsp tomato paste

1 cup cooked rice

1 cup beef broth

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper, to taste

1 1/2 cups shredded mozzarella cheese

Fresh parsley, for garnish


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. In a large skillet, heat olive oil and sauté onion, garlic, and peppers until softened.

3. Add ground beef and cook until browned. Drain excess fat.

4. Stir in diced tomatoes, tomato sauce, tomato paste, broth, rice, and seasonings.

5. Simmer for 5 minutes until slightly thickened.

6. Transfer mixture to baking dish and top with mozzarella cheese.

7. Bake for 20–25 minutes, until bubbly and golden.

8. Garnish with parsley before serving.


Notes

Use brown rice or quinoa for a healthier twist.

Add extra veggies like zucchini or corn for flavor and texture.

Store leftovers covered in the fridge for up to 3 days.
