Description

These Strawberry Shortcake Sushi Rolls are a creative twist on a classic dessert—fluffy cake, whipped cream, and strawberries rolled into adorable “sushi” bites. No baking, no mess, just slice, roll, and wow your guests!

Ingredients

1 pound store-bought pound cake or sponge cake

1 cup fresh strawberries, finely diced

1 cup whipped topping (Cool Whip or whipped cream)

2 tablespoons strawberry jam

Powdered sugar, for dusting

Optional: white chocolate drizzle or crushed freeze-dried strawberries for garnish

Instructions

1. Using a serrated knife, trim off the browned edges of the pound cake.

2. Cut the cake horizontally into thin, flat slices (about 1/4-inch thick).

3. Gently flatten each slice with a rolling pin.

4. Spread a thin layer of whipped topping onto each cake strip.

5. Add a small spoonful of strawberry jam and spread lightly.

6. Sprinkle finely diced strawberries on top.

7. Roll up each strip tightly like sushi and place seam-side down.

8. Chill in the fridge for 30 minutes to set.

9. Slice into 1-inch sushi-style rounds and dust with powdered sugar.

10. Optional: drizzle with melted white chocolate or sprinkle with crushed freeze-dried strawberries before serving.

Notes

Use a soft, dense pound cake that can be rolled without cracking.

Don’t overload with filling or it may ooze out.

Make ahead and refrigerate for up to 1 day before slicing.
