Description
Strawberry Crunch Cheesecake Tacos combine crispy golden taco shells with fluffy cheesecake filling, fresh strawberries, and a nostalgic strawberry crunch topping. A playful, no-bake dessert everyone will love — no forks required!
Ingredients
**Taco Shells:**
6 small flour tortillas
2 tablespoons butter, melted
1/4 cup granulated sugar
1 teaspoon cinnamon
**Cheesecake Filling:**
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping (Cool Whip or homemade)
**Toppings:**
1 cup fresh strawberries, finely diced
1/2 cup strawberry crunch topping (see notes)
Optional: melted white chocolate for drizzle
Instructions
1. Preheat oven to 375°F (190°C).
2. Brush both sides of each tortilla with melted butter. Mix sugar and cinnamon, then coat tortillas.
3. Fold tortillas over the edge of a baking dish or inverted muffin tin to form taco shapes.
4. Bake for 6–8 minutes, or until golden and crisp. Let cool completely.
5. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
6. Fold in whipped topping until fluffy and combined.
7. Spoon cheesecake filling into cooled taco shells.
8. Top with diced strawberries and sprinkle with strawberry crunch topping.
9. Drizzle with melted white chocolate, if using. Chill for 10–15 minutes and serve!
Notes
To make strawberry crunch topping: crush 10 Golden Oreos + 1/2 packet strawberry gelatin + 2 tbsp melted butter. Mix well.
Use cupcake liners to hold tacos upright for chilling or serving.
Best eaten the same day for crisp shells.
