Ingredients
8 slices thick bread (brioche or challah preferred)
4 oz cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1 cup fresh strawberries, sliced
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 tablespoon butter (for cooking)
Optional toppings:
Maple syrup
Powdered sugar
Whipped cream
Extra strawberries
Instructions
1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
2. Spread the cream cheese mixture onto 4 slices of bread.
3. Add sliced strawberries on top, then cover with remaining bread slices to form sandwiches.
4. In another bowl, whisk eggs, milk, vanilla extract, and cinnamon.
5. Heat a skillet over medium heat and melt butter.
6. Dip each sandwich into the egg mixture, coating both sides evenly.
7. Place in skillet and cook for 3β4 minutes per side until golden brown.
8. Remove from skillet and let cool slightly.
9. Serve warm with maple syrup, powdered sugar, whipped cream, or extra strawberries.
Notes
Use slightly stale bread for best texture and to prevent sogginess.
Do not over-soak the bread to keep it from falling apart.
Cook on medium heat to ensure the inside warms while the outside crisps.
You can substitute strawberries with blueberries or raspberries.
