Ingredients
For the Cookie Dough:
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
For Flavor:
1/2 cup freeze-dried strawberries, crushed
1/2 cup white chocolate chips (optional)
Instructions
1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Chill for 20–30 minutes.
2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
3. In a bowl, whisk flour, baking soda, and salt.
4. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
5. Add egg and vanilla extract, mixing well.
6. Gradually add dry ingredients and mix until combined.
7. Fold in crushed freeze-dried strawberries and white chocolate chips if using.
8. Scoop dough and flatten slightly, then place a small spoonful of cheesecake filling in the center.
9. Cover with more dough and seal to form a ball.
10. Place cookies on baking sheet, spacing evenly.
11. Bake for 12–14 minutes until edges are lightly golden.
12. Let cool before serving.
Notes
Chill the cheesecake filling to make assembly easier.
Do not overbake to keep cookies soft and tender.
Use freeze-dried strawberries for best flavor without extra moisture.
Store in the refrigerator for up to 5 days.
