Ingredients
1 lb flank steak or sirloin, thinly sliced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Salt and black pepper, to taste
1½ cups shredded mozzarella or Mexican-blend cheese
4 large flour tortillas
Optional add-ins:
Sliced bell peppers
Onions
Jalapeños
For serving:
Sour cream
Salsa or guacamole
Instructions
1. Heat olive oil in a skillet over medium-high heat.
2. Season steak with chili powder, cumin, paprika, salt, and pepper.
3. Cook steak quickly until just browned and tender; remove from pan.
4. In the same skillet, sauté peppers and onions if using until softened.
5. Lay a tortilla flat and sprinkle cheese over half of it.
6. Add steak and veggies on top of the cheese.
7. Fold tortilla over to close.
8. Cook quesadilla in a clean skillet over medium heat until golden and crispy, flipping once.
9. Repeat with remaining tortillas.
10. Slice into wedges and serve warm with sour cream or salsa.

• Slice steak against the grain for tenderness.
• Don’t overfill—less is more for crispy quesadillas.
