Description

This Delicious Spinach Stuffed Chicken is a healthy and flavorful dinner made with juicy chicken breasts filled with a creamy spinach and cheese mixture. It’s an easy, protein-packed meal that’s perfect for weeknights while still feeling elegant and satisfying.


Ingredients

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional:

1/2 teaspoon Italian seasoning

Fresh parsley for garnish


Instructions

1. Preheat oven to 375°F (190°C) and grease a baking dish.

2. Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.

3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.

4. Add spinach and cook until wilted, then remove from heat.

5. In a bowl, mix cooked spinach, cream cheese, mozzarella, parmesan, and Italian seasoning if using.

6. Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.

7. Season the outside of the chicken with paprika, garlic powder, salt, and black pepper.

8. Place chicken in the prepared baking dish.

9. Bake for 25–30 minutes until chicken is cooked through and juices run clear.

10. Remove from oven and let rest for a few minutes.

11. Garnish with fresh parsley and serve warm.


Notes

Do not overstuff to prevent filling from spilling out.

Use a meat thermometer to ensure chicken reaches 165°F.

You can add sun-dried tomatoes for extra flavor.

Store leftovers in the refrigerator for up to 3 days.
