Description

This Delicious Spinach Mushroom Spaghetti Recipe is a quick, healthy pasta dish packed with earthy mushrooms, fresh spinach, and a light garlic-Parmesan sauce. It’s easy, flavorful, and perfect for weeknights!


Ingredients

8 ounces spaghetti (or whole wheat pasta)

2 tablespoons olive oil

3 cloves garlic, minced

8 ounces mushrooms (baby bella or cremini), sliced

4 cups fresh spinach

1/2 teaspoon chili flakes (optional)

1/2 cup grated Parmesan cheese

1/4 cup pasta water (reserved)

1 tablespoon lemon juice

Salt and black pepper, to taste

Optional garnish: fresh parsley or extra Parmesan


Instructions

1. Cook spaghetti according to package directions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.

3. Add mushrooms and sauté for 5–6 minutes until golden and tender.

4. Add spinach and cook until wilted, about 1–2 minutes.

5. Add cooked spaghetti, reserved pasta water, lemon juice, salt, pepper, and chili flakes (if using). Toss to combine and heat through for 1–2 minutes.

6. Remove from heat and stir in Parmesan cheese until melted and creamy.

7. Serve immediately, topped with extra Parmesan and parsley if desired.


Notes

Make it creamy: Stir in 2 tablespoons of ricotta or heavy cream.

Add grilled chicken or shrimp for extra protein.

Use gluten-free pasta if preferred.

Store leftovers in an airtight container for up to 3 days — reheat with a splash of olive oil or broth.
