Description
Spinach garlic meatballs stuffed with mozzarella are easy and delicious, featuring juicy seasoned meat, fresh spinach, and a gooey cheesy center perfect for dinner or appetizers.
Ingredients
1 lb ground beef
1/2 lb ground Italian sausage
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/2 cup breadcrumbs
1/3 cup grated Parmesan cheese
1 large egg
1/4 cup milk
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
8 oz mozzarella cheese, cut into small cubes
2 tbsp olive oil
Optional:
Marinara sauce for serving
Fresh parsley for garnish
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, combine ground beef, sausage, chopped spinach, garlic, breadcrumbs, Parmesan, egg, milk, Italian seasoning, salt, and pepper.
3. Mix gently until just combined.
4. Scoop about 2 tablespoons of mixture and flatten slightly.
5. Place a cube of mozzarella in the center and wrap meat around it, forming a ball.
6. Repeat with remaining mixture.
7. Place meatballs on prepared baking sheet.
8. Drizzle or brush lightly with olive oil.
9. Bake for 18–22 minutes until cooked through and lightly browned.
10. Let rest for a few minutes before serving.
11. Serve with marinara sauce and garnish with parsley if desired.
Notes
Do not overmix the meat mixture to keep meatballs tender.
Seal mozzarella well inside to prevent leaking.
Use ground turkey or chicken for a lighter version.
You can pan-sear meatballs first for extra browning.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
