Ingredients
8 large eggs
1 cup milk (any kind)
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 small onion, diced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
Optional: cherry tomatoes, basil, or shredded mozzarella
Instructions
1. Preheat oven to 375°F (190°C) and grease an 8×8 inch baking dish.
2. Heat olive oil in a skillet and sauté diced onion for 3–4 minutes until softened.
3. Add chopped spinach and cook until wilted. Set aside.
4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
5. Stir in the cooked spinach mixture and crumbled feta.
6. Pour into the prepared baking dish.
7. Bake for 25–30 minutes, or until the center is fully set.
8. Allow to cool slightly before slicing and serving.
Notes
Add cherry tomatoes or herbs for extra freshness.
Swap feta for goat cheese or cheddar for a different flavor.
