Ingredients
**Cookies:**
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon lemon zest
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
**Lemon Glaze (optional):**
1/2 cup powdered sugar
1–2 teaspoons lemon juice
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy.
3. Beat in the egg, lemon juice, lemon zest, and vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add dry ingredients to wet mixture, mixing until just combined.
6. Scoop dough into 1-inch balls and place on prepared baking sheet.
7. Bake for 9–11 minutes, until edges are set and centers are soft.
8. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
9. For glaze, mix powdered sugar with lemon juice and drizzle over cooled cookies.
Notes
For even more lemon flavor, add a few drops of lemon extract.
Cookies will stay soft in an airtight container for up to 5 days.
Chill dough for 15–20 minutes before baking for a thicker cookie.
