This delicious snickerdoodle cobbler blends buttery cinnamon-sugar cookie dough with a warm caramel-like sauce that forms as it bakes. It’s cozy, gooey, and perfect with a scoop of vanilla ice cream.
Ingredients
**Cobbler Base**
1 cup all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 tsp vanilla extract
1/4 cup melted butter
**Topping**
3/4 cup brown sugar
1/2 tsp ground cinnamon
1 1/2 cups hot water
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
2. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
3. Stir in milk, vanilla, and melted butter until combined.
4. Pour batter into the prepared baking dish and spread evenly.
5. In a small bowl, mix brown sugar and cinnamon, then sprinkle evenly over the batter.
6. Carefully pour the hot water over the top—do not stir.
7. Bake for 40–45 minutes until golden brown on top and bubbling.
8. Let cool slightly before serving. Top with ice cream if desired.
Notes
Don’t stir after adding the water—the magic cobbler sauce forms underneath.
Best served warm straight from the oven.
