Description
This Slow Cooker White Fish in Tomato Garlic Sauce is a healthy, flavorful, and easy seafood dish featuring tender cod or halibut gently cooked in a garlicky tomato herb sauce. Perfect served over rice, quinoa, or crusty bread.
Ingredients
1.5 lbs white fish fillets (cod, halibut, or tilapia)
1 can (14 oz) crushed tomatoes
1/2 small onion, finely chopped
3 cloves garlic, minced
2 tbsp olive oil
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes (optional)
Salt & pepper, to taste
Juice of 1/2 lemon
Fresh parsley or basil, for garnish
Instructions
1. Grease or spray your slow cooker with nonstick spray.
2. In the bottom, stir together crushed tomatoes, onion, garlic, olive oil, oregano, basil, red pepper flakes, salt, and pepper.
3. Lay fish fillets gently over the sauce. Spoon some sauce over the top.
4. Cover and cook on LOW for 2 to 2.5 hours, or until fish is opaque and flakes easily.
5. Squeeze fresh lemon juice over the top before serving.
6. Garnish with parsley or basil.
7. Serve warm over rice, quinoa, mashed potatoes, or with crusty bread.
Notes
Use thick-cut white fish to prevent overcooking.
Avoid stirring the fish during cooking—it may break apart.
Add sliced olives or capers for a Mediterranean twist.
