Description

Silky, warmly spiced apple butter made entirely in the slow cooker. Minimal prep, big cozy flavor, and a spreadable, spoonable texture that’s perfect on toast, pancakes, oatmeal, and more.


Ingredients

5 pounds apples (mix of sweet and tart—Honeycrisp, Gala, and Granny Smith), cored and chopped

1/2 cup packed brown sugar (adjust to taste)

1/4 cup granulated sugar (optional, for sweeter apples)

1/2 cup apple cider or apple juice

1 tablespoon fresh lemon juice

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice

1/2 teaspoon pure vanilla extract

1/4 teaspoon fine sea salt


Instructions

1. Prep apples: Core and chop apples into 1-inch pieces (peel optional). Add to a 5–6 quart slow cooker.

2. Season: Sprinkle in brown sugar, granulated sugar (if using), cinnamon, nutmeg, cloves, allspice, salt, lemon juice, and pour in apple cider. Toss to coat.

3. Cook low and slow: Cover and cook on LOW for 8–10 hours (or HIGH for 4–5 hours), stirring once or twice, until apples collapse and are very soft.

4. Purée: Use an immersion blender to blend until very smooth. For a super-silky finish, pass through a fine-mesh sieve (optional).

5. Thicken: Cook uncovered on LOW for 1–2 hours, stirring occasionally, until thick and glossy. It should form a soft ribbon that briefly sits on the surface before sinking back in.

6. Finish: Stir in vanilla, taste, and adjust sweetness or spices as desired.

7. Store: Cool completely, then refrigerate in airtight jars up to 3 weeks or freeze up to 6 months.


Notes

For no-sugar batches, choose very sweet apples and finish with a touch of maple syrup if needed. Keep lid ajar while thickening to prevent condensation. A pinch of salt enhances the fruit.
