Description
These Slow Cooker Peanut Butter Chocolate Cookie Bars are thick, soft, and packed with melty chocolate. With just a few pantry ingredients and your crockpot, you can whip up the ultimate hands-off dessert!
Ingredients
1/2 cup unsalted butter, melted
1/2 cup creamy peanut butter
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour (or gluten-free blend)
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips (semi-sweet or dark)
Optional: sea salt flakes for topping
Instructions
1. Line the bottom of your slow cooker with parchment paper or spray with cooking spray.
2. In a large bowl, mix melted butter, peanut butter, brown sugar, and granulated sugar.
3. Add the egg and vanilla; mix until smooth.
4. Stir in flour, baking soda, and salt until just combined.
5. Fold in chocolate chips.
6. Spread the dough evenly into the bottom of the slow cooker.
7. Cover and cook on LOW for 2 to 2.5 hours, or until the edges are set and the center is just slightly soft.
8. Turn off the heat and let bars cool in the slow cooker for 30 minutes.
9. Use parchment to lift out and slice. Sprinkle with sea salt if desired.
Notes
For extra gooey texture, slightly underbake and cool completely.
Substitute almond butter or sunflower butter if desired.
These bars store well in an airtight container for up to 4 days.
