Description
This Slow Cooker Mediterranean Fish Stew is a healthy, comforting, and flavor-rich dish made with flaky white fish, tomatoes, olives, and fragrant herbs. A nourishing one-pot meal inspired by coastal cuisine.
Ingredients
1.5 lbs white fish fillets (such as cod, halibut, or snapper), cut into large chunks
1 (28 oz) can diced tomatoes
1/2 cup dry white wine or fish broth
1/2 cup vegetable broth
1 small red onion, chopped
1 red bell pepper, sliced
3 cloves garlic, minced
1/2 cup Kalamata olives, halved
1 tbsp tomato paste
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
1/4 tsp black pepper
1/2 tsp sea salt
1 tbsp olive oil
Zest and juice of 1 lemon
2 tbsp chopped fresh parsley
Fresh basil, for garnish
Instructions
1. In the base of the slow cooker, stir together diced tomatoes, wine, broth, tomato paste, olive oil, garlic, onion, bell pepper, olives, oregano, red pepper flakes, salt, and black pepper.
2. Cover and cook on LOW for 4–5 hours or HIGH for 2–2.5 hours, until vegetables are tender and flavors meld.
3. Stir in fish chunks gently. Cover and cook another 20–30 minutes, until fish is opaque and flakes easily.
4. Add lemon zest, juice, and fresh parsley just before serving.
5. Taste and adjust seasoning as needed.
6. Ladle into bowls and garnish with fresh basil or more parsley. Serve hot with crusty bread or rice.
Notes
Substitute fish with shrimp or scallops if preferred.
Add spinach or kale during the last 15 minutes for extra greens.
