Ingredients
6 lasagna noodles, cooked and drained
2 cups cottage cheese
6 large eggs
1 cup shredded cheddar or mozzarella cheese
1 cup cooked breakfast sausage or bacon, crumbled
1/2 cup milk
1/2 tsp salt
1/2 tsp black pepper
Optional add-ins:
Spinach
Bell peppers
Green onions
Instructions
1. Lightly grease the slow cooker.
2. In a bowl, whisk eggs, milk, salt, and black pepper.
3. Spread a small amount of egg mixture in the bottom of the slow cooker.
4. Add a layer of lasagna noodles.
5. Spread cottage cheese over noodles, then sprinkle sausage or bacon and shredded cheese.
6. Repeat layers until ingredients are used, finishing with cheese on top.
7. Pour remaining egg mixture evenly over the layers.
8. Cover and cook on LOW for 3–4 hours until set in the center.
9. Let rest 10 minutes before slicing and serving.
