Ingredients
1 1/2 lbs boneless, skinless chicken thighs or breasts
3 cups potatoes, peeled and diced
2 carrots, sliced
2 celery stalks, chopped
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons tomato paste
2 tablespoons cornstarch
2 tablespoons water
Optional:
1 cup frozen peas
Fresh parsley for garnish
Instructions
1. Place chicken, potatoes, carrots, celery, onion, and garlic into the slow cooker.
2. Pour in chicken broth and add thyme, rosemary, paprika, salt, pepper, and tomato paste.
3. Stir gently to combine.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
5. Remove chicken, shred with two forks, then return to the slow cooker.
6. In a small bowl, mix cornstarch and water to create a slurry.
7. Stir slurry into the stew to thicken the broth.
8. Add frozen peas if using and cook for an additional 10–15 minutes.
9. Taste and adjust seasoning if needed.
10. Garnish with fresh parsley and serve warm.
Notes
Use chicken thighs for extra flavor and tenderness.
Cut vegetables evenly for consistent cooking.
Adjust thickness by adding more or less cornstarch slurry.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
