Ingredients
1 ½ lbs boneless, skinless chicken breasts (or thighs)
4 cups chicken broth
1 cup diced carrots
1 cup diced celery
1 medium onion, chopped
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried parsley
1 tsp salt
½ tsp black pepper
1 can (10.5 oz) cream of chicken soup
1 cup frozen peas
1 can refrigerated biscuit dough (cut into 1-inch pieces)
Instructions
1. Place chicken, broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper into the slow cooker.
2. Cover and cook on LOW for 6 hours or HIGH for 3 hours, until chicken is tender.
3. Remove chicken, shred with two forks, and return to the slow cooker.
4. Stir in cream of chicken soup and frozen peas.
5. Top with biscuit dough pieces, pushing them slightly into the liquid.
6. Cover and cook on HIGH for 1 additional hour, until dumplings are fluffy and cooked through.
7. Serve warm with extra parsley for garnish.
Notes
For richer flavor, use chicken thighs instead of breasts.
If you prefer homemade dumplings, substitute biscuit dough with your favorite dough recipe.
