Description
This Slow Cooker Berry Cobbler is a simple and comforting dessert made with frozen mixed berries and a fluffy sweet biscuit topping. It’s juicy, warm, and perfect for pairing with ice cream.
Ingredients
**Berry Filling:**
4 cups frozen mixed berries (blueberries, raspberries, blackberries, strawberries)
1/2 cup granulated sugar
1 tbsp lemon juice
2 tbsp cornstarch
**Biscuit Topping:**
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/4 cup unsalted butter, melted
1/2 tsp vanilla extract
**For Finishing:**
1 tbsp coarse sugar (optional, for sprinkling)
Instructions
1. Grease the inside of the slow cooker.
2. In a large bowl, toss berries with sugar, lemon juice, and cornstarch. Pour into the bottom of the slow cooker.
3. In another bowl, whisk together flour, sugar, baking powder, and salt.
4. Add milk, melted butter, and vanilla. Stir until just combined.
5. Drop spoonfuls of the batter over the berry mixture—don’t worry about covering completely.
6. Sprinkle with coarse sugar if using.
7. Cover with a clean kitchen towel under the lid to catch condensation.
8. Cook on HIGH for 2–2.5 hours or LOW for 4 hours, until the top is puffed and cooked through.
9. Let rest 10–15 minutes before serving. Serve warm with ice cream.
Notes
You can use fresh berries instead of frozen—reduce cook time slightly.
Try adding a pinch of cinnamon to the batter for extra flavor.
Store leftovers covered in the fridge and reheat gently.
