Description

This Easy Slow Cooker Beef Manhattan recipe brings classic diner comfort food to your kitchen. Slow-cooked roast beef in savory gravy, served over mashed potatoes and bread—perfect for cozy, satisfying meals.


Ingredients

34 lb chuck roast

1 tablespoon olive oil

1 onion, sliced

3 cups beef broth

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons cornstarch + 2 tablespoons water (for slurry)

Mashed potatoes, for serving

Thick white bread slices, for serving


Instructions

1. Season roast with salt, pepper, garlic powder, and onion powder.

2. Sear roast in a hot skillet with olive oil, 2–3 minutes per side.

3. Place sliced onions in the bottom of the slow cooker.

4. Add seared roast on top of onions.

5. Pour in beef broth and Worcestershire sauce.

6. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until meat is fork-tender.

7. Remove roast, shred or slice as desired, and keep warm.

8. To thicken gravy: whisk cornstarch with water and stir into the slow cooker juices.

9. Cook on HIGH for 10–15 minutes until thickened.

10. To serve: place bread on plate, top with mashed potatoes and beef, then ladle gravy over everything.


Notes

Make mashed potatoes ahead or use store-bought for ease.

Can be served open-faced or as a sandwich.

Add frozen peas or sautéed mushrooms to the gravy for a twist.
