Ingredients

1 lb shrimp, peeled and deveined, chopped

1 cup long-grain white rice (uncooked)

2½ cups chicken broth

1 small onion, finely diced

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

2 tbsp olive oil or butter

1 tsp paprika

1 tsp Cajun seasoning

½ tsp dried thyme

¼ tsp cayenne pepper (optional)

Salt and black pepper, to taste

2 green onions, sliced

Fresh parsley for serving

1. Heat olive oil or butter in a large skillet over medium heat.

2. Add onion, bell pepper, and celery. Cook 4–5 minutes until softened.

3. Stir in garlic, paprika, Cajun seasoning, thyme, cayenne, salt, and pepper. Cook 30 seconds.

4. Add rice and stir to coat with the spices.

5. Pour in chicken broth and bring to a simmer.

6. Cover, reduce heat to low, and cook 15–18 minutes until rice is tender.

7. Stir in chopped shrimp, cover again, and cook 3–5 minutes until shrimp are pink and cooked through.

8. Fluff rice, stir gently, and adjust seasoning if needed.

9. Garnish with green onions and parsley. Serve hot.

Notes

For extra richness, add a tablespoon of butter at the end.

You can add smoked sausage for a heartier version.
