These seared scallops in Cajun garlic butter are crispy on the outside, tender on the inside, and coated in a spicy, rich sauce that’s bursting with flavor. Ready in 15 minutes—perfect for weeknight elegance or date night.
Ingredients
1 lb sea scallops (about 12–15), patted dry
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 tsp Cajun seasoning (more to taste)
1/4 tsp smoked paprika
Juice of 1/2 lemon
1 tbsp chopped fresh parsley (for garnish)
Salt and black pepper to taste
Instructions
1. Thoroughly pat scallops dry with paper towels. Season both sides with salt, pepper, and a pinch of Cajun seasoning.
2. Heat olive oil in a large skillet over medium-high heat until shimmering.
3. Add scallops in a single layer without crowding. Sear for 2–3 minutes per side until golden and opaque. Remove to a plate.
4. Reduce heat to medium. Add butter to the pan. Once melted, stir in garlic, remaining Cajun seasoning, and smoked paprika. Cook for 30 seconds.
5. Stir in lemon juice. Return scallops to the pan and spoon sauce over to coat.
6. Garnish with fresh parsley and serve immediately.
Notes
Make sure scallops are very dry for the best sear.
Use a well-ventilated kitchen—pan searing can get smoky!
Serve with rice, pasta, or crusty bread to soak up the buttery sauce.
