Description

These Roasted Japanese Sweet Potatoes with Miso Glaze are tender, caramelized, and packed with sweet and savory flavor. The naturally rich sweetness of Japanese sweet potatoes pairs beautifully with a glossy umami miso glaze, making this easy recipe a delicious side dish or light vegetarian meal.


Ingredients

2 medium Japanese sweet potatoes

1 tablespoon olive oil

1 tablespoon white miso paste

1 tablespoon maple syrup or honey

1 teaspoon soy sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 tablespoon water

1 teaspoon sesame seeds

1 tablespoon chopped green onions


Instructions

1. Preheat oven to 400°F (200°C).

2. Wash the Japanese sweet potatoes well and cut them into thick wedges or rounds.

3. Place the sweet potatoes on a baking sheet and drizzle with olive oil.

4. Toss well and spread them in a single layer.

5. Roast for 25–30 minutes, flipping halfway through, until tender and lightly caramelized.

6. In a small bowl whisk together miso paste, maple syrup or honey, soy sauce, rice vinegar, sesame oil and water until smooth.

7. Remove the sweet potatoes from the oven and brush the miso glaze over them.

8. Return to the oven for 5 more minutes until glossy and slightly sticky.

9. Remove from the oven and sprinkle with sesame seeds and chopped green onions.

10. Serve warm.


Notes

Japanese sweet potatoes have purple skin and pale yellow flesh with a naturally sweet flavor.

Do not overcrowd the baking sheet so the potatoes roast evenly.

Use white miso for a milder sweeter glaze.

These sweet potatoes pair well with rice bowls, grilled tofu, or roasted vegetables.
