Queso Fundido with Chorizo is a sizzling, melty cheese dip topped with spicy chorizo — the ultimate party starter. Served straight from the skillet, it’s bold, cheesy, and irresistibly shareable.
Ingredients
8 oz chorizo sausage, casing removed
1 tbsp olive oil
1/2 cup diced onion
1 small jalapeño, finely chopped (optional)
8 oz shredded Oaxaca or mozzarella cheese
4 oz shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
Tortilla chips or warm flour tortillas, for serving
Instructions
1. Preheat oven to 400°F (200°C).
2. Heat olive oil in an oven-safe skillet over medium heat. Add chorizo and cook until browned, breaking it apart with a spoon.
3. Stir in onion and jalapeño; cook until softened, about 3–4 minutes.
4. Remove from heat and sprinkle cheese evenly over the chorizo mixture.
5. Bake 8–10 minutes until cheese is melted and bubbly.
6. Garnish with cilantro and serve immediately with tortilla chips or warm tortillas.
Notes
Best served hot and straight from the skillet.
You can use a blend of cheeses like Chihuahua or Pepper Jack for extra flavor.
For a vegetarian version, omit chorizo and add sautéed mushrooms or peppers.
