This Traditional Polish Sausage with Sauerkraut and Potatoes is the ultimate classic comfort food! Smoky kielbasa, tangy sauerkraut, and tender potatoes cook together in one skillet for a cozy, hearty, and truly authentic Polish meal.


Ingredients

1 lb Polish kielbasa sausage, sliced into ½-inch rounds

2 tbsp butter or bacon fat

1 large onion, sliced

3 cloves garlic, minced

4 medium potatoes, peeled and cubed

2 cups sauerkraut, drained (rinse lightly if preferred)

½ cup chicken broth or water

1 tsp caraway seeds (optional but traditional)

½ tsp black pepper

Salt to taste

**Optional Garnish**

Fresh dill or parsley

A dollop of sour cream


Instructions

1. In a large skillet or Dutch oven, melt butter over medium heat. Add sliced kielbasa and cook for 4–5 minutes until browned. Remove from skillet and set aside.

2. Add sliced onion to the skillet and sauté 3–4 minutes until soft and golden. Add minced garlic and cook for 30 seconds.

3. Add cubed potatoes and cook for 5–6 minutes, stirring occasionally until lightly browned.

4. Stir in sauerkraut, chicken broth, caraway seeds, salt, and black pepper. Mix well.

5. Return kielbasa to the skillet, cover, and reduce heat to medium-low.

6. Simmer for 20–25 minutes, stirring occasionally, until potatoes are tender and flavors are well combined.

7. Remove lid and cook another 5 minutes uncovered to evaporate excess liquid if needed.

8. Taste and adjust seasoning. Garnish with dill or parsley and serve hot with sour cream if desired.

Notes

For extra flavor, add a chopped apple or a splash of cider vinegar for sweetness.
