This easy one pot taco orzo with black beans is a quick, flavorful meal packed with bold taco spices, tender orzo, and hearty beans for a satisfying dinner.
Ingredients
1 cup orzo pasta
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound ground beef or turkey
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 can (10 oz) diced tomatoes with green chilies, undrained
2 cups beef or chicken broth
1 packet taco seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar or Mexican blend cheese
2 tablespoons chopped cilantro
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add ground beef or turkey and cook until browned, breaking it apart.
3. Add diced onion and cook until softened.
4. Stir in garlic and cook for 1 minute.
5. Add orzo pasta and toast for 1 to 2 minutes.
6. Stir in taco seasoning, salt, and black pepper.
7. Add black beans, corn, diced tomatoes with green chilies, and broth.
8. Bring mixture to a boil.
9. Reduce heat, cover, and simmer for 10 to 12 minutes until orzo is tender.
10. Stir occasionally to prevent sticking.
11. Remove from heat and stir in shredded cheese until melted.
12. Garnish with cilantro and serve warm.
Notes
Use vegetable broth and skip meat for a vegetarian version.
Add jalapeños for extra heat.
Stir frequently to keep orzo from sticking.
Top with sour cream or avocado for extra flavor.
