This one pot shrimp and sausage jambalaya recipe delivers bold Cajun flavor with juicy shrimp, smoky sausage, and perfectly seasoned rice for an easy dinner.
Ingredients
1 tablespoon olive oil
12 ounces smoked sausage, sliced
1 pound shrimp, peeled and deveined
1 small onion, diced
1 bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 cup long grain rice
2 cups chicken broth
1 can diced tomatoes, undrained
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 green onions, sliced
1 tablespoon chopped parsley
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add sliced sausage and cook until browned, then remove and set aside.
3. Add shrimp and cook for 1 to 2 minutes per side, then remove and set aside.
4. In the same pot, add onion, bell pepper, and celery, and cook until softened.
5. Stir in garlic and cook for 1 minute.
6. Add rice, chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, salt, and black pepper.
7. Stir well and bring to a simmer.
8. Cover and cook for 18 to 20 minutes until rice is tender.
9. Return sausage and shrimp to the pot.
10. Stir and cook for another 2 to 3 minutes until heated through.
11. Garnish with green onions and parsley, then serve warm.
Notes
Use andouille sausage for authentic Cajun flavor.
Adjust Cajun seasoning for more or less spice.
Do not overcook shrimp to keep them tender.
Let the dish rest for 5 minutes before serving for best texture.
