Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup long grain rice

1 can black beans, drained and rinsed

1 cup corn kernels

1 cup salsa

2 cups beef broth

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cheddar cheese, shredded

1 avocado, sliced

2 tablespoons fresh cilantro, chopped


Instructions

1. Heat olive oil in a large pot or deep skillet over medium heat.

2. Add ground beef and cook until browned, breaking it apart with a spoon.

3. Stir in diced onion and cook for 3 minutes until softened.

4. Add minced garlic and cook for 30 seconds until fragrant.

5. Mix in rice, black beans, corn, salsa, and beef broth.

6. Season with chili powder, cumin, paprika, salt, and black pepper.

7. Bring the mixture to a boil.

8. Reduce the heat to low, cover, and simmer for 18 to 20 minutes until the rice becomes tender.

9. Remove the lid and stir gently.

10. Sprinkle shredded cheddar cheese over the top and let it melt.

Notes

Ground turkey or chicken also works well in this recipe.

Use brown rice if preferred, but increase the cooking time slightly.

Add jalapeños for extra spice and heat.
