Description

This No-Bake Oatmeal Creme Pie Icebox Cake is dreamy, nostalgic, and dangerously easy to assemble. Layers of soft oatmeal creme pies and fluffy whipped pudding create a chilled dessert that tastes like childhood upgraded.

Ingredients

1012 Oatmeal Creme Pies

1 (3.4 oz) box instant vanilla pudding mix

1 1/2 cups cold milk

1 (8 oz) tub whipped topping (Cool Whip), thawed

Optional: cinnamon or crushed cookies for garnish

Instructions

1. In a medium bowl, whisk together pudding mix and cold milk for 2 minutes until thickened.

2. Fold in whipped topping until smooth and fluffy.

3. In an 8×8 or 9×9 dish, lay down a layer of oatmeal creme pies (cut in half if needed to fit).

4. Spread half of the pudding mixture over the creme pies.

5. Repeat with another layer of oatmeal pies and the rest of the pudding.

6. Cover and chill for at least 4 hours, or overnight for best texture.

7. Top with a sprinkle of cinnamon or extra crushed cookies before serving.

Notes

Let the oatmeal pies soften overnight for the best icebox texture.

Try using banana or butterscotch pudding for flavor variations.

Keep leftovers chilled and eat within 3 days for freshness.
