This Molten Hot Chocolate Lava Cake is pure indulgence — rich, fudgy, and oozing with warm chocolate center. Perfect for special occasions or cozy nights in, it’s the dessert of your dreams!
Ingredients
1/2 cup (1 stick) unsalted butter
6 oz semisweet chocolate, chopped
2 large eggs
2 large egg yolks
1/4 cup granulated sugar
1/8 tsp salt
2 tbsp all-purpose flour
Butter and cocoa powder, for greasing ramekins
Powdered sugar and berries, for garnish
Instructions
1. Preheat oven to 425°F (220°C). Grease four 6-oz ramekins with butter and dust with cocoa powder.
2. Melt butter and chocolate together in a heatproof bowl over simmering water (or in the microwave in 20-second intervals). Stir until smooth.
3. In another bowl, whisk together eggs, egg yolks, sugar, and salt until pale and thick.
4. Gently fold melted chocolate mixture into the egg mixture.
5. Sift in flour and fold until just combined.
6. Divide batter evenly among prepared ramekins.
7. Place ramekins on a baking sheet and bake 12–14 minutes, until edges are set but centers are still soft.
8. Let rest 1 minute, then carefully invert each onto a plate.
9. Dust with powdered sugar, top with berries or ice cream, and serve immediately.
Notes
For extra gooey centers, bake closer to 12 minutes.
Batter can be made ahead and refrigerated up to 24 hours before baking.
Serve with a scoop of vanilla ice cream for the ultimate contrast.
