Ingredients
1 cup unsalted butter, melted
1/2 cup unsweetened cocoa powder
2 cups granulated sugar
4 large eggs
1 1/2 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups mini marshmallows
For the Chocolate Frosting:
1/2 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/3 cup milk
3 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts, optional
Instructions
1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. In a large bowl, whisk melted butter and cocoa powder until smooth.
3. Add granulated sugar and mix well.
4. Beat in eggs one at a time, then stir in vanilla extract.
5. Add flour and salt, then mix until just combined.
6. Pour batter into the prepared baking dish and spread evenly.
7. Bake for 25 to 30 minutes until the center is set.
8. Remove cake from the oven and immediately sprinkle mini marshmallows evenly over the top.
9. Return cake to the oven for 2 minutes until marshmallows soften.
10. Meanwhile, prepare the frosting by melting butter in a saucepan over medium heat.
11. Whisk in cocoa powder and milk until smooth.
12. Remove from heat and stir in powdered sugar and vanilla extract until creamy.
13. Spread warm frosting over the marshmallow layer.
14. Sprinkle chopped pecans or walnuts over the top if desired.
15. Cool slightly before slicing and serving.
Notes
Do not overbake the cake or it may lose its fudgy texture.
Spread frosting while the cake is still warm for the best gooey finish.
Mini marshmallows melt more evenly than large marshmallows.
