Ingredients

1 tablespoon olive oil

1 pound boneless skinless chicken breasts, diced

1 small onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

6 cups chicken broth

1 can diced tomatoes

10 ounces cheese tortellini

2 cups fresh spinach

1/2 cup feta cheese, crumbled

1/4 cup kalamata olives, sliced

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice


Instructions

1. Heat olive oil in a large soup pot over medium heat.

2. Add diced chicken and cook for 5 to 6 minutes until lightly browned.

3. Stir in diced onion and cook for 3 minutes until softened.

4. Add garlic, Italian seasoning, oregano, salt, and black pepper, then cook for 30 seconds until fragrant.

5. Pour in chicken broth and diced tomatoes.

6. Bring the soup to a gentle boil.

7. Add cheese tortellini and cook according to package directions until tender.

8. Stir in fresh spinach and cook until wilted.

9. Add feta cheese, sliced olives, and lemon juice.
