Ingredients
2 cups fresh spinach, finely chopped
1/2 cup feta cheese, crumbled
1/2 cup ricotta cheese
1/4 cup grated parmesan cheese
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Optional:
Phyllo dough or puff pastry for wrapping
Greek yogurt dip or tzatziki for serving
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. If using fresh spinach, sauté briefly to wilt, then drain excess moisture.
3. In a bowl, combine spinach, feta, ricotta, parmesan, breadcrumbs, egg, garlic, parsley, oregano, salt, and pepper.
4. Mix until well combined.
5. Scoop small portions and shape into bite-sized balls or patties.
6. Place on prepared baking sheet.
7. Lightly brush or spray with olive oil.
8. Bake for 18–22 minutes until golden and crispy.
9. Serve warm with Greek yogurt dip or tzatziki.
Notes
Drain spinach well to avoid soggy bites.
Use panko breadcrumbs for extra crispiness.
You can wrap the filling in phyllo dough for a more traditional Mediterranean style.
Store leftovers in the refrigerator for up to 3 days.
