Ingredients
**For the Salmon & Glaze**
4 salmon fillets (about 6 oz each)
2 tbsp pure maple syrup
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp Dijon mustard
1 tbsp olive oil
1 clove garlic, minced
1 tsp apple cider vinegar or lemon juice
Salt & pepper, to taste
**For the Vegetables**
2 cups broccoli florets
1 red bell pepper, sliced
1 cup baby carrots, halved
1 tbsp olive oil
Salt & pepper, to taste
1 tsp garlic powder (optional)
Instructions
1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper or foil.
2. In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard, olive oil, garlic, vinegar, salt, and pepper to make the glaze.
3. Place salmon fillets on one side of the sheet pan and the vegetables on the other.
4. Drizzle vegetables with olive oil, season with salt, pepper, and garlic powder, and toss to coat.
5. Brush the maple glaze generously over the salmon fillets, reserving 1–2 tablespoons for later.
6. Roast for 15–18 minutes, or until the salmon flakes easily with a fork and the veggies are tender.
7. (Optional) Brush the remaining glaze over salmon just before serving for extra shine and flavor.
8. Serve warm with a squeeze of lemon or fresh herbs — a sweet, savory, and healthy dinner ready in no time!
Notes
Use skin-on salmon for extra moisture.
Substitute vegetables with asparagus, green beans, or Brussels sprouts.
For extra heat, add a pinch of cayenne or chili flakes to the glaze.
Leftovers are perfect for salads, wraps, or rice bowls the next day!
