Ingredients
For the Macaron Shells:
1 cup almond flour
1 3/4 cups powdered sugar
3 egg whites
1/4 cup granulated sugar
For the Filling:
150 g goat cheese (softened)
2 tablespoons honey
1/2 teaspoon vanilla extract
Optional:
Food coloring
Crushed nuts or herbs for garnish
Instructions
1. Preheat oven to 150°C (300°F) and line a baking tray with parchment paper.
2. Sift almond flour and powdered sugar together.
3. In a separate bowl, beat egg whites until foamy, then gradually add sugar and whip to stiff peaks.
4. Gently fold dry ingredients into the egg whites until smooth.
5. Pipe small circles onto the baking tray.
6. Let sit for 30 minutes until a skin forms.
7. Bake for 15 to 18 minutes, then let cool completely.
8. Mix goat cheese, honey, and vanilla until smooth.
9. Pipe filling onto one shell and sandwich with another.
10. Let macarons rest in the fridge before serving.
