Ingredients
4 large russet potatoes
1 tablespoon olive oil
Salt for seasoning
For the Seafood Filling:
1/2 lb shrimp, peeled and deveined
1/2 lb lump crab meat
1 tablespoon Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste
1 tablespoon butter
2 cloves garlic, minced
For the Creamy Sauce:
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk or heavy cream
1/2 cup shredded cheddar cheese
1/4 cup cream cheese
1/4 teaspoon Cajun seasoning
Optional toppings:
Chopped green onions
Fresh parsley
Extra cheese
Instructions
1. Preheat oven to 400°F (200°C).
2. Rub potatoes with olive oil and salt, then bake for 45–60 minutes until tender.
3. While potatoes bake, season shrimp with Cajun seasoning, garlic powder, paprika, salt, and pepper.
4. In a skillet, melt butter and sauté garlic until fragrant.
5. Add shrimp and cook for 2–3 minutes per side until pink. Remove and set aside.
6. In the same skillet, melt butter and whisk in flour to create a roux.
7. Slowly add milk or cream, whisking until smooth and thickened.
8. Stir in cheddar cheese, cream cheese, and Cajun seasoning until melted and creamy.
9. Fold in cooked shrimp and crab meat.
10. Slice baked potatoes open and fluff the insides with a fork.
11. Spoon the seafood mixture generously into each potato.
12. Top with green onions, parsley, or extra cheese if desired.
13. Serve warm and enjoy.
Notes
Use fresh or high-quality lump crab for best flavor.
Do not overcook shrimp to keep them tender.
You can add bacon bits for extra richness.
