This swede, kale, and sweet potato gratin is a wholesome, flavorful twist on the classic creamy bake. Layered with tender root vegetables, earthy kale, and a light, savory cream sauce, it’s the perfect healthy comfort side dish for weeknights or cozy winter dinners.
Ingredients
2 cups swede (rutabaga), thinly sliced
2 cups sweet potatoes, thinly sliced
2 cups fresh kale, chopped
1 small onion, thinly sliced
2 cloves garlic, minced
1 cup milk or light cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella or cheddar
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
Pinch of nutmeg (optional)
Instructions
1. Preheat oven to 375°F (190°C) and grease a medium baking dish.
2. Heat olive oil in a skillet and sauté onions and garlic for 2–3 minutes until softened.
3. Add kale and cook until just wilted. Set aside.
4. Layer swede and sweet potato slices in the baking dish, alternating for even cooking.
5. Season with salt, pepper, and smoked paprika.
6. Spread the sautéed kale mixture over the top.
7. Warm the milk or cream and stir in Parmesan, nutmeg, and a pinch more salt if needed.
8. Pour the mixture over the layered vegetables.
9. Top with shredded mozzarella or cheddar.
10. Cover with foil and bake for 35 minutes.
11. Remove foil and bake another 15–20 minutes until golden and tender.
12. Let rest 5 minutes before serving.
Notes
Swede cooks slower than sweet potato—slice it slightly thinner for even tenderness.
Use coconut milk for a dairy-free version.
Add sage or thyme for extra winter flavor.
