Ingredients

1 lb Polish kielbasa sausage, sliced into ½-inch rounds
2 tbsp butter or bacon fat
1 large onion, thinly sliced
3 cloves garlic, minced
2 cups sauerkraut, drained (rinse lightly if preferred)
1 apple, peeled and chopped (optional for sweetness)
½ cup chicken broth or water
1 tsp caraway seeds (optional but traditional)
Salt & pepper to taste

½ tsp smoked paprika
½ cup cooked bacon bits
1 tbsp brown sugar (for sweeter flavor)
Fresh parsley, chopped (for garnish)
Instructions
1. Heat butter in a large skillet or Dutch oven over medium heat.
2. Add sliced kielbasa and cook 4–5 minutes until browned. Remove and set aside.
3. In the same pan, add sliced onions and sauté for 5–6 minutes until golden and soft.
4. Add garlic and cook 30 seconds until fragrant.
5. Stir in sauerkraut, chopped apple (if using), caraway seeds, salt, and pepper. Mix well.
6. Pour in chicken broth, then return kielbasa to the pan.
7. Stir to combine, cover, and simmer over low heat for 15–20 minutes, stirring occasionally.
8. Uncover and cook another 5 minutes to let the liquid reduce slightly.
9. Taste and adjust seasoning. Garnish with parsley before serving.
