Ingredients
**For the Chicken:**
2 boneless, skinless chicken breasts (pounded to even thickness)
1 cup buttermilk
1 teaspoon hot sauce
1 cup flour
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and black pepper, to taste
Oil for frying (or air frying)
**For the Creamy Spicy Sauce:**
1/4 cup mayonnaise
1 tablespoon sriracha
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon lime juice
**For Assembly:**
4 sandwich buns, toasted
1/2 cup sliced jalapeños (fresh or pickled)
4 slices pepper jack cheese
Lettuce and tomato (optional)
Instructions
1. In a bowl, whisk buttermilk and hot sauce. Add chicken and marinate for at least 30 minutes (or up to 4 hours for deeper flavor).
2. In another bowl, combine flour, paprika, garlic powder, cayenne, salt, and pepper.
3. Remove chicken from marinade, shake off excess liquid, and dredge in seasoned flour until fully coated.
4. Fry chicken in hot oil (350°F / 175°C) for 4–5 minutes per side or until golden brown and cooked through. Drain on paper towels.
5. Alternatively, air fry at 390°F (200°C) for 14–16 minutes, flipping halfway.
6. Whisk all sauce ingredients together until smooth.
7. Assemble sandwiches: spread creamy sauce on toasted buns, layer lettuce, tomato, chicken, cheese, and sliced jalapeños.
8. Top with extra sauce if desired and serve warm!
Notes
For extra heat, use pickled jalapeños and double the sriracha in the sauce.
