This Italian herb butter prime rib is incredibly juicy, tender, and full of savory flavor. A rich garlic-herb butter with rosemary, thyme, and oregano melts over the roast as it cooks, creating a golden crust and perfectly seasoned slices—ideal for holidays and special occasions.
Ingredients
1 (4–5 pound) bone-in prime rib roast
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup unsalted butter, softened
4 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme leaves, chopped
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
1 teaspoon dried Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
Zest of 1 lemon (optional)
Optional: 1 cup beef broth or red wine for jus
Instructions
1. Remove the prime rib from the refrigerator 1–2 hours before cooking so it comes closer to room temperature.
2. Preheat the oven to 450°F (230°C).
3. In a small bowl, combine softened butter, garlic, rosemary, thyme, oregano, Italian seasoning, garlic powder, onion powder, lemon zest (if using), salt, and black pepper until well mixed.
4. Pat the roast dry with paper towels.
5. Rub the Italian herb butter mixture all over the roast, covering the top, sides, and any exposed meat.
6. Place the roast bone-side down on a rack in a roasting pan.
7. Roast at 450°F (230°C) for 15–20 minutes to develop a deep golden crust.
8. Reduce the oven temperature to 325°F (165°C) and continue roasting for 1 1/2 to 2 hours, or until the internal temperature reaches 120–125°F (49–52°C) for medium-rare.
9. Remove the roast from the oven, tent loosely with foil, and rest for 20–30 minutes so the juices redistribute.
10. Slice along the bones to remove them, then carve the roast into thick slices and serve.
11. Optional: for a simple jus, place the roasting pan over medium heat, add beef broth or red wine, and simmer while scraping up browned bits.
Notes
Use a meat thermometer for the most accurate results—prime rib is best slightly pink in the center.
You can prepare the herb butter up to a day in advance and refrigerate it.
Serve with roasted potatoes, green beans, or a fresh salad for a complete holiday meal.
