Ingredients
4 soft hoagie rolls
8 slices provolone cheese
8 oz Genoa salami
4 oz capicola (or hot ham)
4 oz deli ham
2 oz pepperoni
4 cups shredded iceberg lettuce
1/2 small red onion, very thinly sliced
1/2 cup banana pepper rings (pepperoncini)
1 large tomato, thinly sliced (optional)
1/2 cup mayonnaise
2 tbsp red wine vinegar
1 tbsp extra-virgin olive oil
2 garlic cloves, minced
1 1/2 tsp dried oregano
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
2 tbsp finely grated Parmesan cheese
1 tsp Dijon mustard
1/2 tsp sugar
Fresh parsley, chopped (optional, for garnish)
Instructions
1. Make the grinder salad dressing: In a medium bowl, whisk together mayonnaise, red wine vinegar, olive oil, garlic, oregano, Italian seasoning, red pepper flakes, salt, black pepper, Parmesan, Dijon, and sugar until creamy.
2. Toss the salad: Add shredded iceberg, sliced red onion, and banana peppers to the bowl and toss until evenly coated. Let rest 5–10 minutes to soften and mingle flavors.
3. Heat broiler (or toaster oven) to high. Split hoagie rolls and brush cut sides lightly with olive oil. Arrange on a sheet pan, cut-side up.
4. Melt the cheese: Lay 2 slices provolone inside each roll. Broil 2–3 minutes until the cheese melts and the edges of the rolls are lightly golden.
5. Warm the meats: Layer salami, capicola, ham, and pepperoni over the cheese. Return to the heat for 30–60 seconds to warm through (watch closely).
6. Pile on the grinder salad: Spoon a generous amount of the dressed lettuce mixture over the meats. Add tomato slices if using.
7. Finish and season: Drizzle with any extra dressing from the bowl. Sprinkle with a pinch of oregano or parsley if desired.
8. Serve: Close the sandwiches, press gently, slice, and serve immediately while warm and crisp.
Notes
Toast only the cut sides for maximum crunch.
Dress lettuce lightly, then add more to taste to prevent sogginess.
