This Irresistible Caramel Apple Éclair Cake is a no-bake layered dessert with graham crackers, cinnamon-spiced apples, creamy pudding, and a rich caramel topping. It’s a fuss-free fall dessert that tastes like apple pie and eclairs had a baby.
Ingredients
2 sleeves graham crackers
2 (3.4 oz) boxes instant vanilla pudding mix
2 cups cold milk
1 (8 oz) tub whipped topping, thawed
2 cups apple pie filling (or cooked cinnamon apples)
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg (optional)
3/4 cup caramel sauce (store-bought or homemade)
Instructions
1. In a medium bowl, whisk together vanilla pudding mix and cold milk for 2 minutes until thickened.
2. Fold in whipped topping until smooth and creamy.
3. In a separate bowl, stir cinnamon and nutmeg into the apple pie filling.
4. Line the bottom of a 9×13-inch dish with a layer of graham crackers.
5. Spread half the pudding mixture over the graham crackers.
6. Spoon and spread half the apple mixture over the pudding.
7. Add another layer of graham crackers.
8. Repeat with remaining pudding and apple mixture.
9. Top with a final layer of graham crackers.
10. Pour caramel sauce evenly over the top layer.
11. Cover and refrigerate at least 6 hours or overnight until set and soft.
12. Slice and serve chilled!
Notes
Chilling overnight gives the best soft, cake-like texture.
Use cinnamon graham crackers for extra fall flavor.
Top with chopped pecans or a drizzle of white chocolate for garnish.
